Good nutrition means eating foods which keep your body healthy. Nutrients are substances found in food that promote growth, keep you healthy, give you energy and help you live. Food is fuel to your body just as gas is fuel to a car. Your body cannot use food directly for energy. It has to break down the food into nutrients. The body does this through the process of digestion. As we have learned before the process of digestion begins in the mouth. The food then goes down the esophagus to the stomach and into the intestines. The nutrients are absorbed into the blood and sent to the liver where they are broken down some more.
The body uses carbohydrate, proteins, and fats as a source of fuel. There are three types of fats that have different effects on the body. All fats are molecules that contain long chains of carbon atoms that are bonded together. The way these atoms are bonded determines the type of fat.
1. Saturated fats are fats that come from atoms with single bonds. These fats usually stay solid at room temperature, like butter, lard, cheese and fats in meat. These types of fats are known to raise blood cholesterol and cause health problems.
2. Monounsaturated fats are fats that have atoms with a double or triple bond. These fats usually stay liquid at room temperature, like olive oil, canola oil and peanut oil. They are considered to be a good type of fat because they lower lipoproteins (LDL, another name for bad cholesterol), and increase high-density lipoproteins (HDL, another name for good cholesterol).
3. Polyunsaturated fats are fats that come from atoms with double or triple bonds. They also stay liquid at room temperature. Corn oil, soybean oil, sunflower oil, and nuts are all good sources of polyunsaturated fats. They lower both LDL and HDL.
Remember that it is important to choose the correct types of food to use as fuel to your body, but it is also equally important how that food is prepared. The method used to prepare food can determine whether it is the right kind of fuel for your body.
